The table

Dinner is the centre of the evening.

One long table, and a menu built around what the region actually has that week.

Dietary requirements are planned for, not worked around. Nobody gets a lesser version of the meal.

Where Moonacres or another seasonal dining partner is engaged for a booking, they are named for that delivery.

Drinks

Botanical hospitality by Trolley’d.

Native and regional ingredients, foraged where they can be.

Non-alcoholic drinks get the same thought as everything else, because someone at the table always wants one.

Trolley’d is an independent practice with its own brand, equipment, recipes and pre-existing IP. Included where engaged for that booking.

On the water

Guided time on the water.

Kayaks and canoes on Lake Yarrunga, led by Optimum Experiences. Nobody is sent out to work it out alone.

Early morning and late afternoon are the best of it, when the water is flat and the light is low along the far bank. Anyone who would rather stay on the bank is not missing a session.
